Real Louisiana Jambalaya

Here in Louisiana Jambalaya is a Cajun staple....You can go to any restaurant around south Louisiana to get Jambalaya and every place will cook it a different way. You could go to 10 different places and get 10 different variations of this dish. You will find that you can order it anywhere but after you have it home cooked it is just wasting money because any restaurant will make it bland to please the public!! Here is my recipe... If you make it you will LOVE it!!


Ingredients
1lb link sausage cut up rounds
1 lb pork steaks or chops
1 whole chicken cut up
2 lg onions
1 lg bell pepper
1 lg bunch green onions chopped
2 cups rice
salt
black pepper
garlic powder
Cajun seasoning (Tonys)


coat chicken and pork with salt pepper and garlic powder
heat 2 tbs oil in a lg pot or dutch oven
brown chicken and pork on all sides
in the same pot brown sausages both sides






 prepare your vegetables dice onions bell peppers and green onions




 Still in the same pot saute veggies getting all debris left on the bottom of pot from browning meats
once veggies are wilted....



 add chicken pork and sausage back in to the pot with the veggies mix well and let cook 10 mins
 
 
 add 2 cups rice and 4 cups water mix well bring to a boil
cover pot and lower heat to simmer for 25 min.

This Louisiana girl...

My name is Michelle. I have lived in Louisiana all my life. I love to cook, especially food that is that is popular around here. Cooking is a very big part of our culture.
I love to cook for my family, I think they love for me to cook too!
I cook anything and everything baking is my favorite thing to do.

Chuck roast rice & gravy





Today I felt like cooking a big meal.... my husbands favorite meal
Roast rice & gravy corn and corn bread....

4 lb chuck roast
4 lg onions diced
1 lg bell pepper diced
4 garlic cloves minced
flour
salt
pepper
garlic powder

salt pepper and garlic pepper and lightly flour all sides of the roast
in a deep pot or dutch over brown the roast on all sides.

while your browning the roast cut up your onions garlic and bell peppers
after the roast is well browned on all sides remove from pot and set aside.
Put your veggies in the post using the oil and drippings to saute  the onions, garlic and bell peppers until wilted and see through.
When veggies are done add 1/2 cup water sauteed veggies stir and get bits off the bottom. Add the browned roast back to the pot add 1 cup water and stir. Let the roast cook in pot with veggies and water for about 3 hours or until roast is falling apart.

Rice
1 cup rice to 2 cups water
bring 2 cups water to a boil add 1 cup rice and return to a boil, once boilng lower heat to low and simmer with a lid for 20 mins.

Corn Bread muffins
1 box Jiffy corn Bread Mix
1/4 cup milk
1 egg
mix together put in a well greased muffin tin
